Reduced Fat White Onion Veloute


  • 4 medium white onions (peeled and sliced thin)
  • 1 tablespoon butter
  • 2 1/2 cups whole milk
  • Salt to taste
  • 2 tablespoons truffle oil


  1. Gently sweat sliced onions in butter in a medium sauce pan until translucent and tender. Add milk and bring to a boil. Remove from heat and blend immediately. Season with salt and truffle oil.
