Reduced Fat White Onion Veloute
- 4 medium white onions (peeled and sliced thin)
- 1 tablespoon butter
- 2 1/2 cups whole milk
- Salt to taste
- 2 tablespoons truffle oil
- Gently sweat sliced onions in butter in a medium sauce pan until translucent and tender. Add milk and bring to a boil. Remove from heat and blend immediately. Season with salt and truffle oil.
