  • Fill a cocktail shaker with
    ice, and add 1 ounce mezcal,
    1 ounce apple brandy,
    3/4 ounce fresh lemon juice,
    3/4 ounce simple syrup
    (made with equal parts sugar
    and water), and 1 rosemary
    sprig, and shake vigorously.
    Strain the drink into a
    highball glass filled with ice,
    and top with sparkling water.
    Garnish with an apple fan
    (stack 3 apple slices, then
    fan them out). Secure with a
    cocktail pick or a toothpick
    and another rosemary sprig.
