Simmered Bok Choy With Beans and Parmesan


  • Garlic cloves
  • Onion
  • Beans
  • Golden raisins
  • Bok choy
  • Chopped parsley
  • Chives
  • Shaved parmesan


  1. Coat the bottom of a large pot with olive oil and saute 4 garlic cloves, sliced, and 1 small onion, diced, over medium heat until soft. Add 1/4 cup beans of your choice and enough water to cover. Simmer until soft, about 20 minutes, then add 1/4 cup golden raisins and 2 heads bok choy cut into bite-size pieces. Simmer until bok choy is al dente. Transfer to a serving dish and sprinkle with chopped parsley and chives and shaved Parmesan.
