Skinny Mac 'n' Cheese


  • 1 7 ounce bag shirataki ziti noodles
  • 1 pinch salt
  • 2 tablespoons unsweetened almond milk
  • 2 tablespoons low-fat cottage cheese
  • 3 tablespoons shredded low-fat cheddar cheese
  • 1/4 teaspoon dry mustard
  • 1 pinch cayenne pepper


  1. Wash noodles thoroughly in water and pat dry with a paper towel. Place in a bowl and mix in remaining ingredients, adding pepper to taste. Microwave for 2 to 3 minutes until cheese is fully melted.
