Soba Noodles with Tzatziki
- Cooked soba
- Grated ginger
- Plain yogurt
- Toss 1 cup cooked soba with 1/4 cucumber, peeled and julienned, and 1/2 medium tomato, thinly sliced. Stir a pinch of salt and 1/4 teaspoon grated ginger into 2 tablespoons plain yogurt and toss with noodles.
