Sweet Corn, Jalapeno, and Buttermilk Dressing
- Low-fat buttermilk
- Corn kernels
- Lime juice
- Fresh ginger
- Garlic clove
- In a blender or a food processor, blend 1/2 cup low-fat buttermilk, 1 cup corn kernels, 1 tablespoon lime juice, 1 tablespoon honey, 1-inch piece fresh ginger, and 1 garlic clove until smooth. Stir in 1 to 2 jalapenos, seeded and finely chopped; 1/4 cup cilantro, chopped; and 1 teaspoon chives, chopped. Season to taste with salt.
