Zucchini Pizza Crust


  • 2 medium zucchini, grated
  • 1/2 cup shredded kale
  • 1/2 cup grated Parmesan
  • Egg
  • Salt
  • Pepper


  1. Use a kitchen towel to thoroughly squeeze out any water from the vegetables. Then mix them with cheese, 1 egg, and a pinch each of salt and pepper. Stir until evenly combined, turn the mixture out onto a parchment-lined baking sheet, and press into a 12-inch circle, about 1/4-inch thick. Bake at 400 degrees until cooked through, 40-45 minutes.
