This dish, inspired by my recent vacation to Italy, makes a perfect light lunch for two when served with whole-wheat crusty bread:

2 ounces of fresh mozzarella cheese, cubed

1 cup chopped tomatoes

2 teaspoons chopped onion

1 tablespoon minced fresh basil

1 tablespoon olive oil

1 1/2 teaspoons balsamic vinegTar

1/8 teaspoon salt

In a small bowl, combine the cheese, tomatoes, and onion. In another bowl, combine the basil, olive oil, vinegar, and salt. Drizzle dressing over salad; toss to coat. Let stand at least 15 minutes and stir again just before serving.
