The tricky thing about weight loss is coming up with new healthy recipes to try because I tend to get into a routine of eating the same thing over and over.

Below are three new healthier spins on typical comfort foods that I've enjoyed making and found to be very tasty-even people not trying to lose weight will dig in. Try them yourself and let us know what you think! Tweet me @ShapeWLDiary or @Shape_Magazine.

Nuttzo Mediterranean Couscous

Ingredients:

1 1/3 cups couscous

2 cups boiling water

1/2 cup chopped eggplant

1 tablespoon olive oil

1/4 cup chopped yellow heirloom tomato

2 tablespoons finely chopped dill

1/4 cup diced red onion

1/8 teaspoon ground pepper

1/4 teaspoon salt

1/4 cup rice wine vinegar

1 1/2 tablespoons NuttZo

2 tablespoons crumbled feta cheese

Directions:

Mix couscous and boiling water in a large bowl and let stand for 10 minutes. Lightly sauté eggplant with olive oil in a pan. In a small bowl, mix tomato, dill, red onion, sautéed eggplant, pepper, salt, vinegar, NuttZo, and feta cheese. Let sit for about 15 minutes to marinate. Toss into cooked couscous.

Green Chili Pork

Ingredients:

1 pork roast

1 small can roasted green chilies

Directions:

Place pork in a crockpot. Pour chiles on top and cook on low for 8 hours.

Mexican Salad

Ingredients:

1 small onion, chopped

1 tablespoon olive oil

1 pound ground turkey

1 envelope taco seasoning

3 cups lettuce, chopped

1 clove garlic, minced

1 cup shredded cheddar cheese

3 Roma tomatoes, chopped

1 avocado, peeled, pitted, and chopped

1 jar store-bought salsa

Directions:

Sauté onions in olive oil in a pan and set aside. In a separate pan, brown turkey. Add onions. Prepare taco seasoning according to package directions and add to turkey. Mix in remaining ingredients, adding as much salsa as desired.
